Appreciation post: a rainy afternoon in a Portland cafe that changed my whole coffee setup
I was in Portland about five years ago, stuck in a tiny cafe during a downpour. The barista was using a simple metal pour over cone, nothing fancy, but he took a full four minutes to pour the water. He told me, 'It's not about the gear, it's about the wait.' I used to rush my morning cup, just trying to get caffeine fast. Watching him, I realized I was missing the whole point. I went home and dug out my old ceramic dripper. Now I give it that full four minutes every morning, no matter how late I'm running. The taste is so much richer, and it actually makes me slow down for a second. Anyone else have a simple change like that, just taking more time, that made a big difference?
