inThe week my kimchi turned into a fizzy science project
My last batch fizzed over the lid and made a huge mess in my fridge. I had to put the whole jar in a baking dish to catch the overflow. That super sour stuff made the best kimchi fried rice though, I used it with some spam and it was perfect. Letting it mellow in the fridge for a few weeks helped a ton.
