My ribs had perfect pull-back this weekend. How do you make sure it happens every time?

It felt like a real victory. What are your go-to steps for rib prep?

Remembered my grandpa always used to wrap his ribs in newspaper after smoking, which seemed like a weird trick. But man, the meat stayed so tender it just fell off the bone every single time. I should probably try that again.

My neighbor Tom swears by a two-hour rest in a cooler for his ribs. I totally get that victory dance feeling when the bones slide out clean. What works for me is rubbing them down the night before and letting them sit in the fridge. Also, I keep my smoker at 225 degrees and spray with apple juice every hour. Brooke's newspaper trick reminds me of the old foil wrap method, but hey, if it works, it works. Honestly, patience is the biggest part of my routine now.
