Heard a guy at my local roaster say he only buys beans roasted within 48 hours
I was grabbing a bag of the house blend at Third Wave Roasters last Saturday and overheard this dude telling the barista he won't touch beans roasted more than two days ago. It made me realize I've been buying stale stuff from the grocery store for months without even thinking about it. Anyone else check roast dates religiously now or am I overthinking this?

Doesn't letting beans rest a few days actually help with the flavor though? Pretty sure most roasters say 3-7 days off roast is the sweet spot.

My nephew is big into the coffee scene and he leaves bags open on the counter for three days before he even grinds them. I think some people get a little carried away with the freshness thing, seems like it matters more to the guys making a hobby out of it than it does to anyone just wanting a decent cup of coffee.
