The week my first batch of kimchi turned the whole garage into a science project
It was a Tuesday in October when I noticed the jar lid had popped and brine was slowly dripping down the shelf. The smell was so strong my dog wouldn't go in there for three days. Anyone have a good spot for a 'fermentation station' that doesn't take over a whole room?

Watching that kimchi take over your garage makes me see how these small projects always claim more space than we plan. My sourdough starter needed its own cabinet, then my attempt at hot sauce filled a whole windowsill. It starts with one jar and ends with a whole corner of your house smelling like a pickle factory. Life just has a way of expanding to fill all the open space, even in the fridge.
