I told him the satisfaction of a perfect finish after a long day of mudding never gets old, but has anyone else had a client ask something that made you pause and think about the craft?

Smooth walls are a pretty low bar for deep thought.

Smooth walls just mean you painted over the cracks. Real depth comes from understanding why those cracks were there in the first place. People mistake a clean surface for a clean mind. The guy who questions why the wall is uneven usually has more going on upstairs than the one who just wants it smooth.
