I was at a small shop called Puddle Town Roasters last week, and the person making my pour-over added a tiny bit of salt directly to the grounds before brewing. They said it cuts bitterness without needing sugar. Has anyone else tried this trick with their home setup?
Yeah, a tiny pinch is the way to go. I use about two or three grains of coarse salt for a full pot. It just cuts the bitterness without making the coffee taste salty at all. More than that and you'll totally ruin it.
