Switched from boning knives to straight shears for breaking down chickens and never looking back

Used to swear by my curved boning knife for poultry, but after a buddy let me try his 7 inch shears on a 40 bird case last Tuesday, I cut my time by almost 20 minutes. The shears just glide through cartilage without any sawing motion, plus my wrist didn't ache after. Has anyone else made the swap, or am I just late to the party?

Whoa, 40 birds? You did a whole case with shears in one go and cut 20 minutes off? That's wild, I gotta look into those.

Oh man @rowan262, it's actually a game changer once you get the hang of it. I did a batch of 30 quail the other day and stopped the clock at 12 minutes flat. The key is keeping the blade at the right angle so you're not fighting the feather shafts. I was super skeptical at first too but now I won't go back to the old twist and pull method.
