Thought my sourdough was strong when it doubled in size. Your post proves I've been playing it too safe with my rising times. Now I'm tempted to let it go wild just to see what happens. Who knew dough could have such ambition?

My last attempt at that left me scraping dough off the cabinet doors like some kind of gluten-based crime scene. I guess my yeast read your post and got ideas above its station, too! It’s a powerful reminder that our starters are, frankly, a little too powerful sometimes.
