My $60 thermometer saved a brisket I was sure was ruined
I was running a brisket on my offset smoker last Saturday and the built-in lid gauge was reading 275. Felt something was off so I stuck my ThermoPro probe in there and it was actually 310. That $60 investment probably saved me from serving shoe leather to 12 people. Anyone else had a cheap thermometer nearly cost them a cook?

Wait, you ever had a buddy who just refuses to buy a decent thermometer because "the built-in one is fine"? My friend Mike did that for years. He'd always get these dry or burnt briskets and blame it on the cut of meat or the weather or something. Last summer he finally borrowed my ThermoPro for a cookout and his built-in gauge was off by almost 50 degrees too. He was so mad at himself for all those wasted briskets over the years. He finally went out and bought a good one the next week. So yeah, I've seen more than one cook saved by a simple probe check.
