Honestly shocked I just hit 12 hours straight on a brisket without opening the smoker once
Tbh, I got distracted watching a game and just let it ride. Has anyone else found their best cooks happen when you stop fussing?

You know, I used to be a total pit watcher, checking every hour. But that line about your best cooks happening when you stop fussing? I had a pork shoulder turn out perfect last month when I just gave up and went to bed. Maybe we try too hard sometimes.
