Shoutout to the baker at the county fair who warned me about overproofing my sourdough

She grabbed my arm right before I put it in the oven at 4pm on a Saturday and said "honey that dough's gonna spread like a pancake" and sure enough it did, has anyone else had a stranger save their bake at the last second?

right?? honestly that timing is the real crime here. i had a similar save once at a farmers market where this old italian grandma literally snatched a baguette out of my hands right before i scored it and said "you're cutting too shallow, bambina" and she was totally right, the ears came out perfect. i swear experienced bakers have built-in sonar for when someone's about to ruin a loaf.
