Just tried a new brand of yeast and my bread turned into a brick
I grabbed a packet of 'QuickRise Gold' yeast from the store last week because it was on sale. Used my usual white bread recipe, same warm water temp, same proofing time. The dough barely rose at all, maybe half an inch in the bowl. Baked it anyway and got a dense, hard loaf you could hurt someone with. I think the yeast was dead on arrival, maybe from old stock or bad storage at the store. Has anyone else had this happen with a specific yeast brand recently? I'm going back to my trusty Red Star.

Honestly, blaming the yeast brand right away seems off. You said you used the "same warm water temp" but that's the thing, maybe your water was actually too hot this time and you killed it. A few degrees makes a huge difference. I've used QuickRise Gold for months with zero issues, perfect rise every time. Could be you just got a single bad packet, but writing off the whole brand because of one try is a bit much. Your old yeast might just be more forgiving if your method isn't totally exact.

Yeah but it's just bread... one bad loaf isn't a huge deal. Maybe it was a bad packet, maybe your water was off. I'd just try again before swearing off a brand forever.
