Hot take: convection bake vs. regular bake for cookies

I've been going back and forth on this for months. Convection bakes the cookies faster and gives them a better golden color, but regular bake keeps them softer in the middle. Last week I tried both batches side by side with the same dough from my usual recipe. The convection ones came out crispy on the edges after 10 minutes flat, while the regular ones took 14 minutes and were chewier. Which method do you guys lean towards for a standard chocolate chip cookie?

Actually convection bake at 10 minutes might be too long depending on your oven. I run a small bakery and we do convection at 375 for exactly 8 minutes, then rotate the tray and give it 2 more if needed. The real trick is the dough temp, if its fridge cold when it goes in the convection, you get that crispy edge with a soft center way better than regular bake. Regular bake just takes too long and dries out the dough more in my experience, convection locks the shape faster.

Is it really that serious though? I just throw my dough in whenever and they come out fine.
