Visited a new brewery in Asheville and their fermentation room was a total mess

I was on a tour at the new Riverbend Brewery last weekend and they let us peek into the fermentation area. All the carboys were just sitting on the floor, no temperature control, and one had a really cloudy airlock. The guide said it was 'ambient fermentation' but it looked more like a recipe for a batch of vinegar. Has anyone else seen a setup like that and had it actually work out okay?

Yikes, that's a recipe for disaster.

Recipe for disaster" is putting it lightly. It's more like following a cookbook written by a raccoon. I'm just waiting for the part where the whole thing catches fire.
