Fermenting leftover veggies... it made a huge difference in my kitchen waste. Just a simple brine in some jars... saved all those bits from the trash. Now it's almost a game to see what I can save...

My first batch failed because I didn't know the brine ratio (it's about 2% salt by water weight). Once I got that right, even weird stuff like carrot top greens turned out crunchy and good.

Wait, you can ferment carrot tops? That's wild, I always just toss those straight into the compost. They don't turn into a slimy mess? I figured only the actual carrot would work. You're telling me the leafy bits get crunchy too? I need to try this next time, because I hate wasting those.
