Shoutout to the guy who told me to stop coddling my starter

I spent 6 months feeding my sourdough starter twice a day and getting flat loaves until a baker at a farmer's market in Denver told me to just let it get hungry and feed it once every 12 hours. Who else has been overcomplicating something simple because of all the online rules out there?

Man, I feel this so hard. I was out here treating my starter like a fussy houseplant, talking to it and weighing out grams of flour on a tiny scale like I was a scientist. Then I realized it's basically just hungry yeast, not a needy pet. What's the dumbest thing you did before figuring that out?

I once kept a detailed daily journal of my starter's bubbles and smell like it was a science experiment.
