Watch my buddy do the same thing and honestly, it's just a different kind of fun. Some people get really into the details of brewing, and that's their hobby now. Calling it a lab station makes it sound like a chore, but it's just a new way to enjoy coffee. The gear is part of the ritual, not a sign things got too serious.
