Just hit 2,000 covers solo on a Friday, I actually kept count this time
Last night was our busiest service in months. I've been sous for about a year now, and I always tell myself I don't count covers, but I had my little notebook in my chef coat pocket. At the end of the night, I tallied it up: 2,004 plates out of my station alone. That's not including the apps or desserts the other guys did. I don't know why 2,000 specifically got to me, maybe because it's such a round number, but I just stood there looking at the empty pass for like five minutes. It made me think about how we never actually see the numbers pile up, we just grind through each ticket. Has anyone else ever hit a number that made you pause? What was it and did it change how you look at your night?
Whoa, that's wild! 2,004 is a crazy number to hit solo. I once did 1,500 on a New Year's Eve and I just stood there numb at the end, not even tired, just blank. It kinda made me see the whole shift as one huge blur instead of a bunch of small wins. I still don't count, but that one stuck with me for days.
