Had to choose between a $2000 combi oven or a new walk-in cooler for my spot in Austin
Went with the oven because our bread program was struggling with the old deck. It paid off, our focaccia sales doubled in three months. Anyone else faced a big equipment choice that changed your menu?

Shiny new toys can work, but always check if your basics like that AC are covered first.

Bread over cold storage, that's a bold move. Guess you're really banking on that focaccia to pay the rent. My last big choice was a $500 ice machine versus fixing the AC. Chose wrong, spent a summer sweating over milkshakes. Sometimes the shiny new toy is the right call.
