Vent: My cousin thinks he can run the counter without knowing basic cuts.

If you can't tell a ribeye from a sirloin, you have no place in our family butcher shop.

Put him on training duty immediately. If he can't tell a ribeye from a sirloin, customers will spot that from a mile away and lose all trust. Make him label every single cut in the case until it's second nature, no shortcuts. Otherwise, you're gonna get ripped apart in reviews or even sell someone the wrong steak for their big dinner. It's a pain but once it clicks, everything runs way better. Just don't let him touch the counter until he can ID everything blindfolded, fr.
