TIL my shop hit 2000 pounds of sausage made in a single week
We got a huge order from a new restaurant in town and had to run the grinder non-stop for three days straight. I've never seen that much product go out the door so fast. How do you guys handle big surprise orders without burning out your gear?

Wow, that's a crazy amount of work! It reminds me of the time a local diner decided to put our bratwurst on special for a whole festival weekend. We didn't hit your numbers, but we were stuffing casings until like 2 AM. My hands were cramping so bad I had to soak them in warm water. You just get into this weird zone where the grinder's hum is the only sound in the world.

Man, 2000 pounds? That's a LOT of sausage. My old grinder would have started SMOKING halfway through day one. Did you have to stop and clean the thing a bunch of times, or just pray it held together?
