Saw a guy at the Denver meat expo split a lamb spine in one pass with a cheap cleaver and it made me rethink my whole knife setup
I been dropping $200 on fancy German boning knives for years but that one clean cut with a $40 blade had me wondering if we're all just paying for hype, anyone else had a tool that made you question your whole kit?

Oh man, @hart.taylor you just called me out and I wasn't even ready. I've got a whole drawer of overpriced German steel that I treat like museum pieces while my $22 Dexter from the restaurant supply store gets used for everything and still works like new. That Kiwi cleaver is no joke either - I picked one up on a whim and now it's my go-to for breaking down chickens. I think we all just got tricked into thinking expensive means better when really it just means we're afraid to admit a cheap blade can do the same job.

Man, that lamb spine story hits close to home. Spent $180 on a German boning knife that I'm pretty sure is just a glorified butter knife at this point, while my buddy's $35 Kiwi cleaver from the Asian market slices through everything like it's made of air. Makes me feel like a sucker for buying into the fancy names, honestly.
