Pro tip: reusing beef fat trimmings for tallow

Ran across a post from a guy in Texas who said he saves all his fat scraps for tallow instead of tossing them, so I tried it with about 15 pounds of brisket trim last month. The tallow came out clean and worked great for frying potatoes, anyone else do this or just stick to rendering lard?

That tallow also makes unreal refried beans if you sub it for the lard.

Man, that brisket trim tallow sounds incredible for fries! I've only done lard so far from pork shoulder scraps, but you're making me want to try beef now. That's a solid 15 pounds of work too, must have taken forever to render down but totally worth it for that clean, buttery flavor. Sean's tip about refried beans is gold, I bet that rich beefiness adds something special. Nothing worse than tossing good fat when it can make everything taste better.
