Just lost $300 on a 'professional' knife sharpening service that absolutely wrecked my edge.

They used a belt grinder way too aggressively and now my main breaking knife has a wavy, overheated edge that won't hold, so has anyone found a truly reliable sharpener in the Tampa area?

Ouch, that's a brutal lesson to learn the hard way. A lot of those services treat every knife like a cheap lawnmower blade. You might have better luck looking for a local woodworking or metalworking guild. Those guys often have members who sharpen their own high-end tools and might do a side job with real care, using stones instead of a grinder. It's a more controlled process that won't burn the steel. I found a guy who does my chisels that way, and his attention to detail is completely different from a big sharpening shop.
