Choosing between PVA and wheat paste for a 19th century ledger repair

I had to fix the spine on an old ledger from Boston and picked wheat paste over PVA glue. The wheat paste stays flexible and won't yellow, which is better for old paper. It took a bit longer to dry, but the book opens flat now. Has anyone else worked with wheat paste on leather bindings?

Wheat paste for a 19th century ledger" sounds like a bit much for a book.

Sounds like a good way to ruin a book. Just use some normal glue.
