Vent: I gave up on wrapping my brisket after a bad smoke in Dallas
My last brisket at a cookout in Dallas came out dry and tough, even after wrapping it in butcher paper at 165 like everyone says. On a whim, I skipped the wrap entirely on my next one and just let it ride in the smoker with a water pan, and it was the juiciest I've ever made. Am I crazy, or has anyone else ditched the wrap for good?

Honestly, that "bad smoke in Dallas" is like when a rule of thumb just stops working for you. Ngl, I've seen the same thing with my car's maintenance schedule, and bell.emma is right, sometimes you gotta listen to the signs.
