Thought I was a brisket guy until a judge at the Austin comp said my ribs tasted like a campfire
I ran hickory on everything for years, half a cord a season, because that is what my uncle did on his offset. A judge pulled me aside after the Austin Spring Cookoff two years ago and told me my spare ribs were bitter because I was choking them with dirty smoke instead of burning a clean fire. How do you all figure out when a wood is just too much for the meat you are cooking?
