Serious question, how do pitmasters handle grease disposal without hurting the environment?

I saw a video on proper grease management. It's important for sustainable BBQ practices.

Oh they're super eco-friendly... they just pour it into a nearby storm drain to help lubricate the local waterways. Or maybe they let it solidify and use it as bricks to build a shed. Honestly though, that video probably showed the boring truth about grease traps and professional pickup services, which is way less fun than my ideas.

Always figured it all just went down the drain, idk. That video showed the whole grease trap and pickup service thing, which honestly makes way more sense. Kinda changed how I see it now.
