Picked the 18 inch WSM over a used offset last Saturday, and my first brisket finally got a bark ring
I had $400 burning a hole in my pocket and it came down to a used Oklahoma Joe offset off Marketplace or a brand new 18 inch WSM, and I went with the WSM because I cook in a windy apartment lot and did not want to babysit a fire all day. Fired it up Saturday at 6am with two chunks of hickory, held 250 for 11 hours straight, and pulled a brisket with an actual black bark ring instead of the grey mush I kept getting on my kettle. For you guys running offsets, was switching to a drum style ever something you regretted for bigger cooks?

Heard offsets still win for packing in multiple racks of ribs.
