My buddy's brisket advice proved me wrong last Saturday
I always thought wrapping in butcher paper was overrated, but my friend Mike insisted I try it at his pit in Tulsa, and the bark stayed way better than my foil method. Has anyone else had a similar flip on technique after watching someone else's cook?

My neighbor Dave swore by foil for 20 years until his kid wrapped a pork butt in paper at a comp in Wichita and the bark came out way better. He hasn't touched foil since.
