Did you have a fire extinguisher on hand or did you just have to watch it go? I used to think grease fires were mostly a backyard grill problem and that comp setups were too pro for that kind of thing. Then I watched a buddy lose half his cook at a contest in KC and it totally changed how I see it. Now I keep a lid and a dry chem extinguisher within arm's reach the whole time I'm cooking. Twelve racks is a brutal hit though, was that your whole turn-in or did you have backups going?
