I thought I could rush a smoke on some ribs and they came out tough as leather. Why do people skip the basics?

You rushed a smoke? That's like trying to build a house in an afternoon lol. The whole point is low and slow for like 6 hours minimum. No wonder they turned into boot leather.

Tried smoking a brisket in three hours once because my in-laws showed up early. Let's just say the dog wouldn't even eat the leftovers. It had the texture of a car tire and the taste of regret. Pretty sure I still have a piece of that meat in my freezer as a warning to future me.
