I almost ruined a brisket when my offset smoker temp spiked during a storm
I was smoking a 14 pound brisket in Austin last month when a sudden thunderstorm hit and my firebox temps jumped from 225 to 325 in ten minutes. I had to pull the brisket, wrap it in foil, and finish it in my oven at a steady 250 degrees. Has anyone else had to switch to oven finish mid cook because of weather?

Man, that Austin storm sounds rough. I had a similar thing happen with a pork shoulder up in Kansas City last summer. My Char Griller was chugging along at 250, then a freak hail storm came out of nowhere and dumped so much water it dropped my temp to 180. I spent twenty minutes under a patio umbrella trying to get coals lit again. Finally gave up, wrapped it in foil, and threw it in the oven at 275 for the last three hours. Ended up with the best pulled pork I've ever made. Sometimes the oven saves the day.

Wait, you actually got hailed on mid-smoke and still finished in the oven? That's wild @harper_singh18, I would've just ordered pizza after that.
