Watched a 9 minute video from a bakery in Ohio and now I weigh my flour instead of scooping it
I always scooped flour straight from the bag with the measuring cup, the way my mom did it. Then I saw a video from a small bakery in Columbus where the guy weighed 1 cup of scooped flour at 142 grams, but the same cup spooned and leveled came out to 120. That 22 gram gap is almost a whole extra quarter cup per batch. My chocolate chip cookies had been coming out flat and greasy for months and I blamed the butter every single time. Weighed everything for the first time on Sunday and the cookies actually held their shape. So now I'm curious, does anyone weigh their flour for stuff like pancakes and quick breads, or is it only worth the trouble for cookies?
