That bakery in St. Louis got me on the sourdough vs. sweet debate
Went to a place called Knead Bakehouse last month and they only sold sourdough, no sugary stuff at all. They said it's about craft, but honestly are we gatekeeping baking by ditching the fun flavors? Anyone else think a bakery should cover both sides or is sticking to one thing actually smarter?
Man, my buddy drove forty minutes across town for this tiny place that only does chocolate chip cookies. No bread, no muffins, nothing else. He gets there and they're sold out by 11am and the owner just shrugs like that's the business model. He was so mad he sat in the parking lot for ten minutes. Part of me gets the whole focus thing, but a spot that only sells one thing better be the best version of it in the state. Otherwise you just drove across town for a letdown.
