The pastry chef at my work said my butter was too warm and she was right
I was laminating dough at like 68 degrees and wondering why my layers kept smearing, and she told me to check the butter temp instead of blaming the recipe. Now I chill my butter block to 58 degrees with an instant read and my croissants finally have real layers. Anyone else got a temp range they swear by for lamination?
