My bokashi bin smelled like a dead animal after 2 weeks - here's what I did wrong

I started a bokashi bin in my studio apartment near downtown Austin about a month ago. Thought I was following the directions perfectly but after 2 weeks the smell was so bad my neighbor knocked on my door. Turns out I wasn't pressing the food down enough and letting too much air get in. Has anyone else dealt with their indoor compost getting funky and found a fix that actually works without buying extra stuff?

Oh man, that sounds rough. I had almost the exact same thing happen with my first bokashi bin and I nearly gave up on the whole thing. The smell was so bad I thought something had died in my kitchen cabinets. The biggest thing that turned it around for me was really packing the food down hard, like stomping it flat with a potato masher, and then sprinkling a generous layer of the bran on top until you can't see any food. I also started opening the spigot every few days to drain the liquid, because letting that stuff sit and ferment too long makes everything sour and rank. Have you tried adding a handful of shredded newspaper or cardboard to soak up extra moisture before you close the lid?
