Saw a guy level floors with self leveler at a job site in Phoenix and it changed my whole method
I was helping a friend on a tile job in Phoenix last month. The floor was way off, like a 1/2 inch dip in the middle. He just mixed up some self leveler and poured it, took maybe 20 minutes. I always fought with shims and plywood to fix low spots. Has anyone else switched over to self leveler for big dips instead of building up layers?

Self leveler is a total game changer for big dips like that. No more messing around with shims that shift or plywood that never sits right. Once you try it for a serious low spot you never go back.

You said it's a "total game changer" and I get that, but I gotta gently push back a little. Self leveler is amazing for big dips, sure, but it's not a cure-all. If the dip is more than like half an inch deep in one spot, you usually need to do it in layers or you'll get a thick spot that cracks later. Also, you still gotta make sure the subfloor is clean and primed right, or that stuff won't bond and you'll have a mess. It's not quite as simple as pour and walk away, your mileage may vary on that.
