The diner down the street from my apartment uses a 3-compartment sink for dish soap and it made me rethink my whole setup
I grabbed breakfast at the little diner on 5th Street last weekend and happened to sit right by the kitchen pass. The dishwasher was running plates through a 3-sink setup and I watched him use three different soaps for the wash, rinse, and sanitize steps. The wash sink had a basic blue degreaser, the middle was just hot water, and the last had a faint bleach smell. I asked him about it and he said the cheap stuff works fine as long as you keep the water hot and change it every 30 minutes or so. My mind was blown because I have been using one pump of the thickest gel I can find on a sponge and wondering why my glasses come out cloudy. I went home and tried his method with two small tubs in my sink and my wine glasses came out way clearer. Has anyone else tried splitting the wash and rinse like this at home, or is it just overkill for a small kitchen?
