Realized I was rinsing wrong after a diner cook laughed at me
Been doing dishes for over a decade, mostly squirting soap straight on the sponge and scrubbing each plate one by one. Last Tuesday at George's Diner in Akron, I watched a cook fill a sink with hot water, add a tiny drop of Dawn, and soak everything for five minutes before wiping. He saw me staring and said 'you're just moving grease around, not cutting it.' Tried his way that night with a full load of crusty lasagna pans, used maybe a quarter of the soap I normally do, and my hands felt less stripped too. Anyone else have a moment where a pro showed you the obvious thing you'd been missing?
