Hot take: I used to think a French press was the only way to get a real cup, but after my friend in Portland showed me his pour-over setup last spring, I've been using a V60 every morning.

Honestly, the clarity and clean finish you get from a paper filter just makes my usual dark roast taste completely different, so has anyone else switched methods and been totally surprised by the result?

So you're saying the pour-over just tasted weak to you, @caseyfox? I get that, I had the same problem at first... my coffee tasted kinda thin and sad. What worked for me was grinding the beans way finer than I did for my french press, and it made all the difference. It slowed the water down and pulled out more of that good stuff, so it wasn't just fancy hot water anymore. Now I kinda bounce between both ways depending on my mood.

That "clarity and clean finish" you like is exactly what I can't stand. It strips out all the oils and body that make coffee taste rich to me. My French press gives it that thick, almost syrupy feel that a paper filter just kills. I tried a pour over once and it tasted like weak, fancy hot water.
