Watched a line cook in Providence break down a chicken in 90 seconds and I'm still thinking about it
Stopped into a tiny spot on Federal Hill in Providence last month and the guy working the line next to me broke down a whole chicken in about 90 seconds with one knife and no wasted moves. He said the trick was keeping his board clean as he went instead of pushing scraps to the corner, and I've been trying it all month. Anyone else pick up a habit like that just from watching someone work, and did it actually stick?
