TIL that spending $250 on a decent Japanese chef's knife was the best move I've made in years

I used to buy those $30 knife sets at the grocery store and sharpen them maybe once a year... My wrists were always sore after chopping. Last month I finally bit the bullet on a single Shun Santoku from a knife shop in Portland. The first time I sliced through an onion without pushing down, I felt like an idiot for waiting so long. Has anyone else had that moment where spending more actually saved them time and frustration?

Same thing happened to me with a Wusthof, my knife sharpening days are over now.

Your knife sharpening days are over now"? Wow, that's a little dramatic don't you think? I mean I get it if you sent it to a pro and they messed up the angle or took off too much metal. But one bad experience with a Wusthof and you're swearing off ever sharpening anything again? That seems like throwing the whole knife block out with the dull blade.
