I bought a $300 sous vide circulator for a special dinner and it changed how I cook at home

I was making a birthday dinner for my wife and wanted to cook a perfect steak. I got the circulator online after seeing a chef friend use one. It let me hold the steaks at exactly 130 degrees for two hours while I worked on sides. The result was edge-to-edge perfect doneness, something I could never get right on my grill alone. Now I use it weekly for chicken, fish, and even vegetables. Has anyone else found a piece of gear that became a daily driver after one big event?

Edge-to-edge perfect doneness is a game changer, I mean once you get that it's hard to go back.

My buddy tried to argue for a "good char" on his steak last week. Made him try the edge-to-edge method you mentioned, @park.joseph. He hasn't shut up about it since.
