Had to pick between a 40k BTU burner and a 22k BTU one for the new line last month

I went with the higher output burner thinking it'd speed up service, but it scorched my pans and made it impossible to hold a steady simmer. Three weeks in and I'm already swapping it out for the smaller one. Has anyone else regretted going too big on heat output?

My buddy did the same thing and his hollandaise broke every single time.
