A prep cook in Seattle once told me to taste everything raw

I was new and rushing to get a mirepoix ready, and he just quietly said, 'You can't know what you're fixing if you don't know what you started with.' I still taste a single carrot or celery rib before I chop it. Does anyone else have a simple rule they learned early on that stuck?

My dentist would have a fit about that.

Yeah, mine too... she already lectures me about my coffee habit. If she saw me crunching ice or eating those super hard candies, she'd probably add an extra ten minutes to my cleaning just to scold me.
