Hold on, wait a second. You talked to a chef in Nashville? Like, one of those guys with the hot chicken and the brisket? Man, that's insane, I went there two years ago and saw this place that does an overnight dry brine with duck fat for their fried chicken. I can't believe he told you to ditch the flaxseed, that stuff is like liquid gold for a first coat if you do it right, but I guess if he's working with those smokers all day he knows his oils better than me.

Chefs know their stuff when it comes to cooking fats. Flaxseed oil has that low smoke point that just doesn't hold up for seasoning compared to something like grapeseed or avocado.
