Remember when you could just trust the wood at the yard? I bought a whole stack of 'kiln dried' walnut that warped like crazy after a week in the shop, cost me over $400.

Kiln dried" just means it went through a kiln once, not that it's actually stable. You basically have to acclimate it in your own shop like it's still green wood.
