Vent: I never appreciated back fat until today
I mean, it seemed like waste, but it adds so much flavor when rendered. Maybe it's just me, but I'll save it from now on.

My grandma always saved pork back fat for roasting potatoes. Honestly, that rendered fat makes vegetables taste amazing. Tbh, your post makes me want to be better about saving those trimmings too.

My grandma used bacon fat for everything. It's not subtle but it works for certain things. Maybe you just need the right veg for it.
